Salad and Bread
Salads feel light.
Bread takes a little longer.
One is closer to the natural taste of the ingredients.
The other needs time.
These are things I’ve been seeing on Substack.
There’s not much noise there.
People just write about what they’re making, what they’re eating.
It’s all pretty simple.
But it feels good to look at.
I thought I’d share a few of them here.
Salad
Olivye Salad


A very classic Eastern European salad.
It’s something Katie always has on New Year’s Eve.
Everything is diced really small,
then mixed together.
The texture is soft,
but not completely mashed.
It holds together just enough on a spoon.
The color isn’t very bright,
but it feels solid.
It looks filling.
Comforting.
The ingredients are simple too:
potatoes, eggs, pickles,
some diced meat,
and a bit of mayonnaise to bring it all together.

Broccoli Apple Crunch Salad
This one is from @eatlikeafarmer.
The broccoli is cut into small florets,
even the stems are used.
The apple is crisp,
cut into small pieces.
There are nuts,
and a bit of dried fruit.
When it’s all mixed together,
it feels like there’s something to bite into.
Not a light leafy salad.
More like every bite has something in it.

Bread
Greek Olympic Bread
A bread made with ancient grains.
It looks dense,
and full of nutrition.
When you slice it open,
there are air pockets inside.
On top, there’s a layer of pistachio spread and cocoa butter.
The colors contrast slightly.
It feels like something that gives you energy.
Something steady.
Here it is:
Butter Bread
A few slices of rye bread.
Dark in color.
Laid out one by one.
With a thick layer of butter on top.
Melting slowly
into the texture of the bread.
It just looks really good.
Halloumi + Olive Herb Loaf
A more savory kind of bread.
Feels like something you’d have for breakfast.
When you cut into it,
there are olives inside.
And bits of green herbs.
The cheese has melted a little into the bread,
but you can still see it.
Not completely blended.
It feels layered.
Like there’s more going on in each bite.
Looking at these,
I kind of want to try a few.
Some feel quick.
Some take a little more time.
